Organic food production in Spain: from grove to glass through cold extraction
Every product in the We Are Bio range begins with a controlled process — organic agriculture, mechanical extraction, minimal intervention. We apply the same discipline to olive oil as we do to stone-fruit preserves: source verified raw materials, process them with care, test the result before it leaves the facility.

The Orchard
We work with groves and farms that have been chemical-free for a minimum of three years before we accept a single harvest. No synthetic pesticides, no herbicides, no GMOs — that is the entry requirement, not the aspiration. Soils are rested between cycles. Trees are hand-pruned to manage canopy and yield. Harvest timing is dictated by the fruit, not the calendar: olives are picked when polyphenol content peaks, stone fruit when sugar develops naturally on the branch.
All farms hold current EU Organic certification and undergo annual third-party audits. For buyers, this means every ingredient arrives with a paper trail — certification numbers, audit dates, producer identity — ready for your compliance team before you even ask.

The Press
Our extra virgin olive oil is extracted at 24 degrees Celsius, well below the EU threshold of 27 degrees for cold extraction. Avocado oil is pressed below 40 degrees. Both processes happen within hours of harvest to prevent oxidation and preserve the fruit's full chemical profile.
Nothing is refined. Nothing is blended. Nothing is deodorised. The oil you receive is the oil the fruit produced — with its polyphenols, chlorophyll, and volatile aromatics intact.
What this means on a shelf: measurably higher polyphenol counts, a flavour profile that holds through the product's life, and a nutritional story that stands up to scrutiny. These are points of difference your buyers will notice and your marketing team can use.

The Kitchen
Preserves are slow-reduced in small batches using open copper and stainless-steel vessels. The ingredient list is short: whole organic fruit, organic agave syrup, and natural fruit pectin. That is the complete recipe — no refined sugar, no artificial thickeners, no artificial preservatives.
Sauces follow the same principle — organic vegetables, cold-pressed oil, sea salt, and nothing else.
For buyers building a clean-label range, these products require no asterisks and no fine-print explanations. The label reads the way consumers want it to read: real ingredients, nothing else.

The Laboratory
Before any batch is released, it passes through independent laboratory analysis. We test for acidity, peroxide value, polyphenol content, and full microbiology panels. Samples from every batch are archived. Results are kept on file.
Certificates of analysis are available on request — and we mean available, not "available after three weeks and a follow-up email." When your compliance team or a retail auditor needs documentation, we deliver it.

Packaging
Oils are bottled in dark glass to protect chlorophyll and slow oxidation under retail lighting. Preserves and sauces go into glass jars. Labels are printed on recycled paper. Shipping cartons are fully recyclable.
