Blackberries gathered from the wild hedgerows of Galicia in late summer, when the fruit is so ripe it stains the hand. Reduced slowly, seeds and all, into a preserve as dark as wet slate. No sugar is added — the fruit provides its own sweetness, restrained and honest.
